Steamed pudding

Steamed pudding

 

Ingredients

1 cup self raising flour

1 cup plain flour

1 tps bi carb

2 tps mixed spice

1 tps ground ginger

125g butter

2 eggs beaten

1 cup firmly packed brown sugar

1 cup mix dried fruit

½ cup glazed cherries

1 cup raisins

1 cup pitted dates

1 cup pitted prunes

¼ cup brandy

Optional  rind of 1 orange

Custard to serve

 

Method

Crease and line an 8 cup pudding steamer.

Place all dried fruit in a sauce pan with 1 cup water, the brown sugar and the butter, bring to the boil then allow to simmer for 5 minutes , remove from the heat and stir in the bicarbonate of soda and allow to cool.

Once cool stir in beaten eggs, orange rind and the Brandy

Mix and sift  plain flour , self raising flour, mixed spice and the ground ginger,

Now thoroughly mix the wet and dry ingredients together , once you are happy they are mixed well place into the pudding steamer. Place you steam into a lager saucepan of boiling water ,making sure that the boiling water is half way up your pudding steamer cover with the lid and reduce the heat to a simmer .

Simmer for 4 hours .

 

After 4 hours remove the pudding steamer and let stand for 5 to 10 minutes then turn out and serve with custard or Brandy cream.
