Custard
make your own custard that everyone will enjoy , yes it is a little rich but will go well with christmas pudding or fruit just about anything really .

Ingredients
600 ml thicken cream
6 egg yolks
½ cup of sugar
Tps vanilla essence or 1 vanilla pod split
1 or 2 tbl spoons of corn flour mixed in a little milk
In a medium bowl place egg yolks and sugar, beat ( whisk) until thick and creamy and egg yolks are lighter in colour .
In a medium saucepan place the cream and seeds (pod) and bring to the boil once boiled remove from heat and strain , ( Note if you are using vanilla essence you can add it to the boiled cream or add after you have combined the cream and egg yolks ) now slowly pour the hot cream into the egg mixture and continuously whisk , place back into the saucepan and reduce the heat to a simmer ( note you can easily burn your custard at this point)
Now add your corn flour to the custard a little at a time stirring all the time , to gain the required thickness of the custard you like .
This custard is better than any you will buy in the store and ten times better than any custard powder , its almost to die for
It is also an excellent base for ice-cream just increase the sugar by ½ a cup and add whatever you like then freeze .
